Olive tapenade


Tapenade sauce is prepared using olives and herbs, it is a great addition to many meals, toasted bread and sandwiches.


two cups green olives
3 tablespoons capers
1 clove garlic
1 tablespoon lemon juice
3 tablespoons olive oil
1/4 teaspoon fresh ground peppercorns


Pit the olives.
Put all ingredients in a blender: olives, capers, garlic, olive oil and ground peppercorns and pulse lightly to bind the ingredients.

The tapenade can be prepared with a mixture of green and black Kalamata olives, or only using black olives.
