From ancient times fruits were the basic foodstuff man, but if modern man was to jump to ancient time, he probably would not recognize any of today’s varieties because the wild ancestors were much shorter, even taste much different. The varieties we have today are the result of centuries of selection, and hybrid products of agro-technology. Fruits give to the human body quick energy and fluids combined with electrolytes and minerals. Fruits consist mainly of carbohydrate and water, it is characterized by relatively low energy density (except nuts) and high biological value because of its vitamin, mineral, antioxidants and fiber content. There are also metabolic cofactors, organic acids and a whole range of useful phytochemicals.
